Vibrant, colorful bell peppers come together with rich Italian sausage for a hearty pasta. Mixing in a serving of kale & broccoli microgreens boost the nutritional value of this zesty comfort meal.
Ingredients: (Makes 4 servings):
1lb Ground Italian Sausage (or 12.8oz sausage links of any kind)
2 Tablespoons of olive oil (or any cooking oil)
1 Jar of Pasta Sauce (any kind)
2 bell peppers (any color) sliced into strips or chunks
1/2 red onion diced or sliced
3 cloves of garlic minced
1 box of pasta (any kind)
1-2 cups of super greens microgreens mix
Fill a large pot with water, add some salt and bring to a boil. Add uncooked pasta to the boiling water; stirring occasionally. Reduce heat to medium-low, cover, and cook until the pasta is tender, 8 to 10 minutes.
Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add sausage; breaking up the chunks as it cooks, stirring, until no longer pink, 2 to 4 minutes. Transfer to a paper towel-lined plate.
3. Add bell pepper and onion to the pan with the leftover oil from the sausage; cook, stirring occasionally, until softened, about 5 minutes. Stir in garlic, crushed red pepper (if using), pasta sauce, and the cooked sausage; cook, stirring, about 3 minutes.
4. Once the pasta is fully cooked, drain the water out, reserving the noodles. Toss the noodles into the sauce/sausage/pepper combination
5. Sprinkle the microgreens on top of the pasta.
