Pancetta Mac N' Cheese w/ Onion Microgreens

What better vehicle for the major nutrition boost in microgreens than a creamy bowl of Mac n Cheese with pancetta. Onion microgreens add a subtle onion garlic flavor.

Ingredients (Serves 2):
  • 1 serving of cavatappi or any pasta

  • 1 tablespoon salted butter

  • 1 tablespoon all-purpose flour

  • 1/2 cup of (any percentage) milk

  • 1/2 cup (2oz) shredded sharp cheddar cheese

  • Salt and pepper to taste

  • Chopped onion microgreens

  • Pancetta

  1. Bring a pot of lightly salted water to a boil over high heat

  2. Cook pasta according to instructions on the box

  3. In a small saucepan, sauté pancetta until brown and crispy. Remove from pan and set aside

  4. Melt butter over medium heat. Whisk in flour and thicken for about 30 seconds to 1 minute. Slowly whisk in the milk, whisking out any lumps. Keep whisking constantly until mixture thickens for 2 to 5 minutes.

  5. Remove from heat and stir in cheese until completely melted. Add salt, pepper, and any additional spices

  6. Once pasta is ready, mix it together with the cheese sauce

  7. Top off with onion microgreens and serve immediately. Enjoy!
