Goat Cheese Burger with Carmelized Onions & Spicy Salad Microgreens

This arugula-dominant spicy microgreen mix is the perfect flavor enhancement to a juicy burger. Carmelized onions and goat cheese join the flavor party for an unforgettable dish.

Ingredients (serves 5-6):
1 Tablespoon olive oil
1 large yellow onion, sliced
1 1/2 lb. ground beef
Salt
Pepper
Crumbled goat cheese, for serving
Hamburger Buns-- (pretzel buns, etc.)
1/2- 1 cup of spicy salad microgreens per burger
Directions:
Heat oil in a pan over medium heat and add the onions. Cook, stirring frequently, until onions are a golden caramel color and very sweet. This will take 25-30 minutes. If the onions start to burn you can turn down the heat a little bit and/or add a sprinkling of water to the pan. Once onions are caramelized, remove from heat and set aside.
Preheat charcoal or gas grill to medium high heat.
Crumble the ground beef into a large bowl. Sprinkle evenly with salt and pepper and gently mix with your hand. Gently form the meat into 5-6 patties. Place patties on the grill and grill for 3-4 minutes per side or until cooked to your liking.
To serve, place the burgers on split buns. Top with caramelized onions, goat cheese, and spicy salad microgreens.
