Goat Cheese Burger with Carmelized Onions & Spicy Salad Microgreens

This arugula-dominant spicy microgreen mix is the perfect flavor enhancement to a juicy burger. Carmelized onions and goat cheese join the flavor party for an unforgettable dish.

Ingredients (serves 5-6):
  • 1 Tablespoon olive oil

  • 1 large yellow onion, sliced

  • 1 1/2 lb. ground beef

  • Salt

  • Pepper

  • Crumbled goat cheese, for serving

  • Hamburger Buns-- (pretzel buns, etc.)

  • 1/2- 1 cup of spicy salad microgreens per burger

  1. Heat oil in a pan over medium heat and add the onions. Cook, stirring frequently, until onions are a golden caramel color and very sweet. This will take 25-30 minutes. If the onions start to burn you can turn down the heat a little bit and/or add a sprinkling of water to the pan. Once onions are caramelized, remove from heat and set aside.

  2. Preheat charcoal or gas grill to medium high heat.

  3. Crumble the ground beef into a large bowl. Sprinkle evenly with salt and pepper and gently mix with your hand. Gently form the meat into 5-6 patties. Place patties on the grill and grill for 3-4 minutes per side or until cooked to your liking.

  4. To serve, place the burgers on split buns. Top with caramelized onions, goat cheese, and spicy salad microgreens.
